My dissertation examines how food scenes are used by American authors in works of realism to depict immigrants and, in turn, to comment on dominant culinary and narrative trends. By tracing the development of realism alongside social and cultural ideas about how and what people were instructed to eat and read, my project seeks to obtain a more comprehensive understanding of the relationship between consumption and assimilation at the turn of the twentieth century.
