Changes in public policies directed at food establishment have the ability to affect the consumption and nutrition of consumers through changes in product prices and quality. My dissertation investigates how food prices and quality change in response to policies such as the minimum wage, sugar sweetened beverage taxes, and bans on trans fatty acids.
